They spend more on fast food than on movies, books, magazines, newspapers, videos, and recorded music combined.”

HEALTHY HEARTY VEGAN MEAL

African Chickpea Soup

Peanuts were brought to America from Africa, where they are often ground to a paste to thicken and flavor soups and stews. For a spicier soup, use up to 1/2 tsp. cayenne pepper, or pass a bottle of hot sauce at the table.
Directions
Heat oil in large pot over medium heat. Add onion, and sauté 5 minutes, or until soft and golden. Add garlic, and cook 2 to 3 minutes more, or until garlic is lightly browned.
Blend peanut butter and 1/2 cup broth in food processor to make smooth paste. Blend remaining broth into mixture.
Add paprika, coriander and cayenne to onion mixture, and sauté 1 minute, or until fragrant. Stir in peanut butter mixture, chickpeas and tomatoes. Simmer 5 minutes. Season with salt and pepper, and stir in spinach just before serving.
INGREDIENTS
2 tsp. olive oil
1 medium onion, chopped (about 1 cup)
1 clove garlic, minced (about 1 tsp.)
1/4 cup smooth natural peanut butter
2 cups low-sodium vegetable broth, divided
1 tsp. paprika
1 tsp. ground coriander
1/4 tsp. cayenne pepper
1 15-oz. can chickpeas, rinsed and drained
1 14-oz. can diced tomatoes
2 oz. spinach, chopped (about 2 cups)

Essential Oil Protocol for Autism by Ruby Gibson

I put this protocol together for a family whose 6-year old son, Bryson, was beginning to display signs of Autism after receiving a bundled immunization of MMR (measles, mumps and rubella). Bryson’s symptoms included loss of concentration, inability to make eye contact, blank stare, irritability, being uncooperative, lessened vocabulary and self-soothing rocking. His response to this protcol was so positive that I have decided to include it in Message Scent for other families who have children with autism. Please note that this does not replace the care of a health professional, and please adjust for individual needs, lifestyle and behaviors.
PROTOCOL With this protocol it is very important to double Bryson’s intake of water to help flush out the toxins. Eliminate all white sugar and white flour products. Use agave, honey or stevia instead of processed sugar. Reduce consumption of meat and dairy, and be sure to have him eat lots of organic fresh fruit and raw veggies, like carrot sticks and celery. Lots of unsweetened juice. NO soda, NO ice cream, NO microwaved food, and NO artificial sweetners like ASPARTAME. This cleansing protocol will take from 4-6 months. Be sure to track any changes you notice and stay in touch. We want to eliminate the toxins slowly, so his system does not get overwhelmed. Also, my friend, Carl Janicek, recommended the homeopathic remedy THUJA - 6c or 12c - as an anti-sycotic miasm remedy, but he recommends muscle testing Bryson with it first to be sure it is the correct remedy. You can use this in conjunction with the essential oil protocol below if you choose to use the THUJA.

ESSENTIAL OILS: Brain Power essential oil blend can be applied at the base of Bryson’s head on the occipital ridge, and on the back of his neck. It is also good to apply on temples and around ears, but be sure to keep away from eyes! Apply 2-4 drops daily, once in the morning and once at night. It will help with concentration, focus, and for detoxing the nerve receptors in the brain. Many of the oils in this blend contain high sesquiterpene compounds that have been shown to increase oxygen around receptor sites around the pineal glands, pituitary, and hypothalamus. For brain fog, you can apply a drop on your thumb and put on the roof of his mouth and hold for a moment. This will get the Brain Power directly into his system quickly. (Although it doesn’t taste great and he may complain that it tastes yucky! You can always follow with a teaspoon of honey). Valor is for grounding, strengthening and balancing the energetic and electrical systems of his body, enhancing internal resources. Apply to Bryson’s feet in the evening before sleep to settle him down, or to relax on a stressful day (good for adults too!). It’s good when things feel overwhelming. The affirmation to use with this oil is, “I come from my strength.” JuvaCleanse is a blend for liver detoxification. It is rather strong, and most adults take 3-10 drops in water daily for liver cleansing. But for someone Bryson’s age, it would be better to apply 3-5 drops to the bottom of his feet once a day. Rub in thoroughly. The three oils in this blend will help to support normal liver function, to chelate heavy metals that have stored in his liver, and to help his body more easily process toxins he is eliminating. It takes about 15 minutes for any essential oil applied topically to make its way through the body.

Thieves This a blend to strengthen the immune system. The oils are highly antiviral, antiseptic, antibacterial and anti-infectious. Good for your entire family as natural antibiotic support. Apply 5-8 drops topically on Brysons’s feet when he begins to feel a flu or cold coming on. More for adults, less for children. You can also put a couple drops in a small glass of warm water and gargle with it to ease a sore throat. This oil can be taken internally, so be sure to swallow the water after you gargle. And you can apply topically over swollen glands to support the lymphatic system. This oil has a warming sensation from the cinnamon and clove oils, and it can be irritating to sensitive skin, so blend with a carrier oil if needed, especially for young children (see note below). Oregano is a single oil that may help respiratory infections, digestion problems, balance metabolism, viral and bacterial pneumonia, respiratory system problems, and strengthen the vital centers. Best taken in capsules. It is fantastic to eliminate colds and flus when taken internally. Use in this Antibiotic Recipe by Dr. Terry Friedmann: Place 9 drops Thieves, 6 drops Oregano and 3 drops Frankincense in a OO capsule, and take 2 caps twice a day for adults. For Bryson half the dose, or if he can’t swallow capsules, apply oil to his feet and then cover with socks for immune system support.

Important Note: If you get essential oils in the eyes or mucous membrane areas, it might sting or burn temporarily. If this does happen, apply a few drops of a good quality vegetable carrier oil, such as olive, almond, apricot seed oil, jojoba, (NO canola oil), around the eyes or place of irritation. This will dilute the action of the essential oil and reduce irritation within a moment or two. Do not apply water, as it will increase the action of the essential oil. Agave syrup, a refined fructose product is being cleverly marketed in the health food industry as a wholesome, natural, low glycemic sweetener. Even the word “nectar” is deceiving, as if it is dripping fresh from flowers or fruit.

Agave nectar, or more accurately refined fructose agave syrup was created in the 1990’s using technology devised by corn refiners to chemically convert corn starch to corn syrup, known as high fructose corn syrup, the sweetener that has done much to increase obesity, insulin resistance and increased heart disease and diabetes. The main carbohydrate in agave is starch, which, like corn starch, is chemically converted to highly refined fructose.

The sugar that comes from fruit is levulose. The word “fructose” is cleverly used by corn refiners to make you think it is a natural fruit sugar. Fructose is not absorbed like other sugars. It does not go directly into the bloodstream, but instead it goes to the liver where it is converted to triglycerides and fat. “Low glycemic” makes it sound safe. It is anything but safe. High fructose corn syrup is 55% fructose. Agave “nectar” is about 70% fructose.

While refined fructose agave syrup won’t spike your blood sugar levels, it will deplete minerals, inflame the liver, harden the arteries, cause insulin resistance leading to diabetes, obesity and cardiovascular disease, and may be toxic for use during pregnancy.

So don’t use this unnatural sweetener or “health foods” that contain it. As always, read labels so that you can make informed choices about what you put into your body.

Gluten-free Diets Help Many

For 20 years, Maurie Ange of El Cerrito, Calif., suffered from chronic belly aches. A decade ago, she was diagnosed with irritable bowel syndrome and told to exercise more and increase her fiber intake. But the pain, bloating and digestive issues continued into her 60s. Finally, four years ago, at the suggestion of an osteopath she was seeing for sinus trouble, Ange went on a gluten-free diet, avoiding everything that contained the protein found in wheat (durum, semolina, spelt, kamut, einkorn and faro), barley, rye, contaminated oats, and a host of products including lipstick, soy sauce and pharmaceuticals. "Ninety percent of my issues are gone," Ange says. "When I fall off the wagon the pain and yuckiness return."

Ange is one of many who has benefited from gluten-free living. Whether they suffer from gluten intolerance, hope to temper the symptoms of autism, or have been diagnosed with celiac disease, an autoimmune disorder that affects one in 133 adults and is getting overdue attention, they are going gluten-free for good, not as a fad.

It is a lifestyle, that, when approached naturally and under medical supervision, provides relief and bonuses such as avoiding processed and packaged foods. Still, cutting out gluten is difficult. It requires vigilant label reading and a dedication to eating at home. Most American staples such as pizza, pasta, beer and burgers are off limits. On the bright side, the things you can eat - proteins and fruits and vegetables - are good for you. As a result, Pleasanton, Calif., personal chef Claudia Imatt has seen an overwhelming surge in the number of requests for gluten-free menus. "People are requesting it for their ailments," says Imatt, owner of Shall We Dine. "Everything from headaches and weight loss to fatigue, seasonal or wheat allergies and fibromyalgia."

A typical dinner menu emphasizes fruits, greens, proteins and creative spins on rice, corn, beans and potatoes in lieu of wheat-based starches. Imatt struggles to find gluten-free products that meet her standards and don't "break the bank," she says. Overall, she has found that people who come to her for help changing their diet "embrace it and live well. "It's less garbage and less processed foods," she says. "You know where the food is coming from and you can see the ingredients that are in it."

Ten years ago, Kay Junta of Concord, Calif., marched into her general practitioner's office and told him she was so sick she was afraid she would die. The year before, he had diagnosed her with IBS and sent her to a specialist who put her on medication for digestive issues and abdominal pain. But, her health continued to deteriorate. Eventually, she went into malnutrition.

Finally, the doctors performed a blood test and intestinal biopsy. They confirmed the culprit as celiac disease, a multi-system, multi-symptom autoimmune disorder that often mimics the symptoms of other bowel disorders. According to the Celiac Disease Foundation, when individuals with celiac disease ingest gluten, the villi, tiny hairlike projections in the small intestine that absorb nutrients, are damaged. Damaged villi do not effectively absorb basic nutrients such as proteins, carbohydrates, vitamins and minerals. Junta, a passionate baker, educated herself and eliminated gluten from her entire diet, reading labels for cross-contamination warnings and seeking out celiac-friendly restaurants.

"I have my life back," says Junta, now 65. "But I still have to be careful. Even a breadcrumb can make me very ill." She has even transformed her favorite cake and cookie recipes by using bean or potato flour and relying on yogurt or applesauce as thickening agents. Her friends can't tell the difference, she says. "It's not rocket science," Junta says of living gluten-free. "Do you want to save your life or do you want to go on being sick? I chose not to be sick." But, not everyone with celiac disease has perceptible gastrointestinal symptoms, which can include fatigue, gas, bloating, abdominal pain or chronic diarrhea or constipation. Unexplained anemia and behavioral changes such as depression are not uncommon. If left untreated, damage to the small intestine can be chronic, causing an increased risk of associated disorders and issues such as infertility, intestinal lymphomas and Dermatitis Herpetiformis, a skin manifestation of celiac disease characterized by blistering, itchy skin. "It can be a very indolent disease," says Gary M. Gray, professor of gastroenterology at Stanford University and director of its celiac management clinic. "There are a lot of people who have food intolerances but many true celiacs have intermittent symptoms or no symptoms. In most patients it's hard to diagnose."

While the cause of celiac disease is unknown, it is genetic and can be triggered by a viral infection, severe emotional stress, pregnancy or childbirth. So if someone in your family has been diagnosed with it or a related autoimmune disorder, it is best to get tested, Gray says. The biggest problem is when people go off gluten on their own and then come in to get tested for celiac or gluten intolerance, he adds. "If they've done it (the diet) for a month or longer, it's likely we can't diagnose it," he says.

Furthermore, he adds, some people gain rather than lose weight as a result of the diet because they load up on fat-laden, gluten-free packaged goods. Like Gray, San Ramon registered dietitian Kathi Nichols doesn't recommend launching into a gluten-free diet without a diagnosis. It's too hard, she says. Nichols, 51, was diagnosed with celiac disease three years ago after seeing numerous physicians for unexplained anemia and dermatitis.

"It is one of the most difficult things I've ever had to do," she says, of going gluten-free. "I thought I could just go to the store and buy anything. But a food manufacturer could suddenly change their recipe and add gluten. So it takes twice as long to do a grocery store trip because you have to read everything. And it's more expensive." The bright side, Nichols says, is that she has discovered food items from different cultures, including a tapioca flour Bolivians use to make rolls. And her disease hasn't kept her from traveling overseas. Quite the contrary. Many celiacs enjoy going to other countries, particularly to England and Australia, where awareness is higher and restaurants are accommodating, Nichols says.

Overall, she advises people to stay focused on what they can eat and remind themselves that there's more to life than diet. "The only place I have not walked into in years is McDonald's," she says, laughing. "Celiac controls my choices, but it doesn't control my life," she says. Lori Crowley of San Ramon, Calif., helped reclaim control of her son's life when she took him off gluten last October. Aidan, 5, suffers from a developmental delay known as sensory integration dysfunction. It affects his ability to balance, process information and discern touch. "He had these moments where he seemed spaced out," she says. "He also had issues with aggression and compliance."

While her son has not been diagnosed with an autism spectrum disorder, Crowley was aware of the research circulating about the link between diet and developmental issues. According to the Autism Research Institute and Defeat Autism Now, some children with autism cannot properly digest gluten. Instead of passing through the digestive system, the protein breaks down into peptides that leak into the bloodstream of children with ASDs and trigger an opiatelike effect in the brain. With help from a friend with a celiac child, Crowley made the transition. And, within two weeks, Aidan had changed.

"The spaciness is gone. So is the aggression," Crowley says. "I think the fog in his brain kind of cleared. It doesn't mean that it's gone away.
